How hard would it be to modify this pattern to make an octopus for the fabulous Chiara? And could it be I've at last found a project that makes me think it might finally be time to learn to knit?

It should be fairly simple. I think octopi have smaller domes, so if I were going to design an octopus hat, I would probably make the top part of it much like a normal hat, then add eight tentacles.

At that point it might almost be easier to start with a normal hat pattern (something like: cast on to go around your head, knit in the round for a while, decrease slowly, decrease faster, then pull the yarn through the last 5-10 stitches) and then sew tentacles onto the bottom. I don't have a clear enough notion of what an octopus looks like to know what to do about the beak and eyes.

Ooh, or you could do bottom ribbing in a darkish color, then knit eight tentacles from the tips up and attach the raw stitches to the hat in tentacle color, then use tentacle color to complete the hat as above. That would be harder for a beginner, but I think it would look better.

You are making me suspect, as I did when originally composing this post, that perhaps I would be better off hiring one of my knitting friends for this assignment. Is cost of yarn plus a dinner challenge equal to the fun and effort involved in modifying the pattern a reasonable offer, perhaps? I'm just saying. And it's 3 AM and I've been up drinking vodka (and lemonade and coconut-pineapple juice) with hot women, which I feel the need to brag about, so there.

That is definitely worth bragging about, true.

I suspect pricing depends a lot on the person and your relationship with them. I'd be leery of anyone who did it solely for the money, as economics and handknitting don't mix ethically in this era, but I could very well see someone doing it for friendship or for the challenge of it, and then paying materials plus dinner is a nice sort of addition. Hell, I'd be interested if I didn't know that knitting for someone else makes me stressed out in a way I'm not willing to accept from a hobby. It is an interesting challenge.
